Standardizing Recipes

Nutrition Services Division

Welcome to the California Department of Education (CDE) Nutrition Services Division Standardizing Recipes online training.

By completing this interactive module, you will learn how standardizing recipes for Child Nutrition Programs (CNP) is key to ensuring children and adults receive the calories and variety of nutrients they need daily as part of the CNP meal service. Participants will learn to identify steps to accurately increase or decrease recipe yield to meet meal requirements, and access sample standardized recipes and resources to create standardized recipes for breakfast, lunch, snack, or supper.

The content of this training focuses on applying standardized recipes in School Nutrition Programs, however, the information is applicable to meal service in all CNPs.
The training resources are available in the Referenced Resource section of this training. You will need the following handouts for the training activities: Basics at a Glance, Recipe for Rotisserie Chicken, ServSafe Cooking Requirements for Foods. Please be sure to access them prior to beginning the training.
This training takes approximately 30 minutes to complete. Please allow enough time to complete the training in one sitting. After completing the training, you will take a short quiz followed by a training evaluation. You will then have access to a printable training certificate of completion for your records.

Navigation options are available at the bottom of the screen.
